These homemade gnocchi made with potatoes are soft and tender, perfect for a comforting meal. Paired with a pink creamy sauce, they offer a perfect balance between the sweetness of cream and the acidity of tomato.
Ingredients
- potatoes (about 3 medium), peeled and cut
- all-purpose flour
- 1 egg
- salt
- olive oil
- 2 cloves of garlic, minced
- tomato sauce
- cream (15% or 35%)
- grated Parmesan cheese
- Salt and pepper to taste
- sugar
Instructions
- Boil the potatoes until they are tender. Drain and mash into a smooth puree. Let cool.
- Add the egg, salt, and flour to the puree. Mix until a soft dough forms.
- On a floured work surface, shape the dough into ropes and cut into small pieces. Roll on a fork to create ridges (optional).
- Bring a large pot of salted water to a boil and cook the gnocchi until they float to the surface (about 2-3 minutes). Drain.
- In a pan, heat the olive oil and sauté the garlic. Add the tomato sauce and simmer for 5 minutes.
- Add the cream, Parmesan, salt, pepper, and sugar if desired. Mix and heat gently.
- Add the cooked gnocchi to the sauce and coat well. Serve hot with basil.
- Note: For even lighter gnocchi, avoid overworking the dough. You can also lightly sauté them in a pan after cooking for a golden texture.
