Tortellini mixed with a light Asian-style sweet and sour sauce, citrusy, and served with seared tuna and sautéed vegetables.
Ingredients
- Fresh or frozen tortellinis, according to package
- Soy sauce
- Canned tuna (medium can, drained)
- Sriracha
- Lime juice
- Minced garlic
- Honey
- Chicken broth (liquid)
- Thinly sliced yellow onion
- Zucchini (sliced or rounds)
- Red bell pepper (strips or diced)
- Reserved pasta cooking water
Instructions
- Cook the tortellinis according to the package. Reserve 1 tbsp of cooking water, then drain the pasta.
- In a pan over medium heat, sauté the onion and zucchini for about 5 minutes.
- Add the red bell pepper and garlic. Continue for 2 minutes.
- Add the soy sauce, sriracha, lime juice, honey, and chicken broth. Mix well.
- Add the drained tuna and let simmer for about 3 minutes.
- Add the reserved cooking water to the sauce and mix.
- Add the drained pasta to the pan and coat well with the sauce.
- Serve hot.
