Chickpeas, zucchini and sweet spices in a rich coconut sauce.
Ingredients
- Zucchini
- Cooked chickpeas (drained)
- Coco milk
- Red or yellow curry paste
- Onion
- Fresh ginger (grated)
- Peanut oil or neutral oil
- Fresh cilantro
Instructions
- Sauté the onion and ginger in oil. Add curry paste.
- Add diced zucchini, chickpeas, coconut milk. Simmer for 20 minutes.
- Adjust salt, green lime if desired. Sprinkle with cilantro.
