This whole chicken slow cooker is tender, juicy and flavorful thanks to a slow cooking with savory vegetables. It's a complete meal, easy to prepare and perfect for busy days. The vegetables absorb the cooking juices and become tender.
Ingredients
- 1 whole chicken of about 1.8 to 2.2 kg
- olive oil
- paprika
- garlic powder
- onion powder
- dried thyme
- salt
- black pepper
- 4 carrots, peeled and cut into large chunks
- 4 potatoes, cut into large pieces
- 2 stalks of celery, cut into pieces
- 1 large yellow onion, cut into quarters
- 4 cloves of garlic, crushed
- chicken broth
- Dijon mustard
- lemon juice
Instructions
- Mix the paprika, garlic powder, onion powder, thyme, salt, and pepper, then rub all over the chicken with olive oil and spices.
- Place the carrots, potatoes, celery, onion, and garlic at the bottom of the slow cooker to create a bed of cooking.
- Mix the chicken broth, Dijon mustard, and lemon juice, then pour this liquid over the vegetables.
- Place the whole chicken on top of the vegetables, breast side up.
- Cover and cook on low for 7 to 8 hours or high for 4 to 5 hours, until the meat is tender and the internal temperature reaches at least 160°F (71°C) in the breast.
- Remove the chicken from the slow cooker carefully and let it rest for 10 minutes before slicing.
- Serve the chicken with the vegetables and drizzle with a little cooking juice.
- Note: For a more golden skin, pass the chicken under the broiler of the oven for 3 to 5 minutes after cooking. You can also add turnips or rutabaga with the other vegetables. The cooking juice can also be thickened with a little cornstarch to make a sauce.
