Pepper tomatoes, bell peppers and poached eggs in the sauce.
Ingredients
- Diced Tomatoes
- Red Bell Pepper
- Onion
- Garlic
- Eggs
- Ground Cumin
- Olive Oil
Instructions
- Heat the olive oil in a large skillet or sauté pan over medium heat. Sauté the onion and red bell pepper for a few minutes, until they start to soften.
- Add the minced garlic and cumin, then cook for about 30 seconds, just long enough to release the aromas.
- Stir in the diced tomatoes, season with salt and pepper to taste, then let simmer over low heat for about 15 minutes, until the sauce thickens slightly.
- Create four small wells in the sauce using a spoon, then crack an egg into each well.
- Cover and continue cooking for about 6 to 8 minutes, or until the whites are set and the yolks are still slightly runny, depending on your desired doneness.
- Garnish with fresh cilantro just before serving and enjoy hot.
